Four ingredients and ready in two minutes, here’s why I LOVE this salad
Howdy beauties! The taste of summer Southampton and the rest of the UK was recently blessed with meant I’ve been eating this bad boy almost every day 🙂
And as my personal training clients and boot camp attendees know, I’m all about the speed and simplicity of recipes. This one’s probably the simplest one I’ll ever share with you, mainly because what you see in the photo is what you get! Nothing hidden or secret, which is why I love it so much (and it does look rather pretty too.)
So…I probably didn’t actually need to share it with you, but in case you missed my Facebook or Instagram feeds, here it is anyway for your viewing and eating pleasure, to include at your next barbecue or just have for lunch when you only have two minutes to spare.

- 1 organic beef tomato
- 1/2 an organic avocado
- Few basil leaves
- 1 tbspn organic balsamic vinegar
- Slice the tomato thinly and arrange on a plate
- Slice the avocado into strips and arrange in-between the tomato slices
- Tear the basil leaves and scatter over
- Drizzle the balsamic vinegar over the top, evenly
- Enjoy!
- Double or triple the quantities to make a larger serving either for 2 or for a barbecue side dish
