Gluten-free, grain-free and sugar-free yet so yummy you’d never know they were healthy!

After a few requests from personal training clients and Bootcampers, I’m so excited to share with you this absolutely incredible recipe for chocolate muffins! They taste so wonderful, yet contain no refined sugar. You’d never know once you eat them, the secret (that’s not so secret anymore) is the inclusion of the sugar substitute Sugavida!

This wonder product (available from Amazon) has been an absolute God-send in creating recipes that require an un-holy amount of sugar. So if you’re attempting to cut down, I hope it serves you just as well!

I got hold of some Enjoy Life semi-sweet chocolate chips (from Ebay) which have been a great addition and give enough of a sweet flavour, because chocolate muffins simply wouldn’t be the same without chocolate chips now, would they?

Enjoy and let me know what you think! x

Healthy Chocolate Muffins

Free from gluten, refined sugar and grains – these are the tastiest chocolate muffins I’ve ever tried and you’d never know they were healthy!

  • 100 g goats butter (room temperature)
  • 50 g Violife dairy-free cream cheese
  • 150 g almond flour
  • 60 g organic raw cacao powder
  • 90 g Sugavida ((sugar substitute available on Amazon!))
  • 1 tsp gluten free baking powder (I use Doves Farm)
  • 4 organic eggs ((weight total of 250g))
  • 1 handful Enjoy Life semi-sweet chocolate chips ((optional))
  1. Preheat oven to 200C

Place all dry ingredients except the chocolate chips if using, in a mixing bowl and whisk until combined.

Combine the butter and Violife cream cheese in a separate bowl. Add to the dry ingredients along with the eggs. Beat until combined. Add in the chocolate chips.

Place in muffin cases and smooth the top to create a flat top, to create an even rise.

Place in the oven and cook for 15-20 minutes until firm to touch.

Place on a cooling rack to cool before storing in an airtight container.

    Enjoy!
