Isn’t it annoying when you click on a blog for a recipe, only to find you have to scroll down for ages until the writer eventually gives it to you?!

I’m guessing you don’t need to hear about the back story, evolution or purpose behind this easy recipe for what are, in my opinion, the best melting chocolate puddings EVER that also happen to be gluten-free, sugar-free, dairy-free* and suitable for nut allergy sufferers?

Thought not. So here it is 🙂

Makes four ramekins:

Ingredients
125g organic raw cacao
100g organic raw coconut oil
120g xylitol (plus 2 extra tablespoons)
3 large organic eggs
35 grams gluten free rice flour
1 tsp raw vanilla
*50g organic goats butter if you are not dairy intolerant

Preheat oven to 200C
Melt the coconut oil in a saucepan. Transfer to a bowl and add the raw cacao and 2 tablespoons xylitol. Mix well. If you are using the goats butter, melt it and add it.

In a separate bowl, mix the eggs with the flour and remaining xylitol. Add the coconut cacao chocolate mixture and vanilla. Mix well.

Grease 4 ramekins (with coconut oil) and transfer mixture evenly.

Bake for 12-15 mins, keep checking in order for the puddings to have risen but the chocolate is all melted in the middle. Too long will mean there is no melty centre!

Remove from oven and transfer onto plates. Wait a couple of minutes for them to cool before digging in.

Chocolate orange ramekins
If you fancy chocolate orange flavour ramekins, omit the vanilla and instead add the juice and zest of a fresh orange.
